About/History of Fried Chicken

Fried chicken has origins in two places. The Scottish had a tradition where they would deep fry chicken in fat unlike their counterparts in England who would either bake or boil their chicken. Later Scottish immigrants would take this with them to the Southern United States. The second place of origin can be found in West Africa, where dishes would often feature fried chicken, this was usually done using palm oil. When these were introduced to the Southern United States fried chicken became a staple part of the diet. When African slaves were brought to America they would introduce seasonings and spices which were absent in the Scottish recipes. Doing this enriched the flavour and over time fried chicken passed into common use as a southern dish.
